I whipped together these Duncan Hines <strong>Blueberry Streusel muffins</strong> last week. With the change in weather I wanted to make something that was simple and would warm the house up. Muffins were a great start because they taste good, smell good and they`re a better alternative to that crap my boyfriend occasionally picks up at Dunkin Donuts (seriously, no muffin should be that high in fat).
This particular muffin mix is pretty neat because it has a can of fresh blueberries in it, which you open, drain and rinse to get all the colored water out of. You then dump that mixture in with your dry muffin mix. Instead of using eggs and oil as described on the packaging, I used roughly 12 ounces of soda water. Well, I dumped in 1 cup, found it wasn`t enough and just kind of eyeballed the rest -- but I`m going to say it was around 12 ounces. Once combined, I sprayed some cupcake liners and evenly divided the muffin mixture out into the 12-cups. I then opened the streusel topping and spooned that onto the top of each raw muffin and baked the ~22 minutes.
These muffins were really good! Light and fluffy. Granted they may not be as light and fluffy as mine were if you followed the box directions -- but overall they`re good nonetheless. My boyfriend enjoyed them and we ate them during the week. We`re now out of muffins which means I`m going to have to make another batch this week.
