Blueberry Pancake Recipe!

Hello Lovelies! I usually dont post anything under the "food" category but I tried this recipe today and wanted to share! I got a cookbook from Williams-Sonoma called: Family Meals. I love this cookbook because not only does it give great recipes but it actually talks about the different ingredients and the right things to use and how to shop for them.

The recipe I tried this morning was called "stacks of blueberry pancakes." I highly recomment it...

-1 1/2 cups of all purpose flour
-1 tablespoon sugar
-1 tablespoon baking powder
-3/4 teaspoon kosher salt
-1 cup milk
-2 large eggs
-4 tablespoons unsalted butter, melted, plus more for cooking
-1 teaspoon pure vanilla extract
-1 1/2 cups fresh or frozen blueberries
-syrup for serving

In a small bowl, stir together the flour, sugar, baking powder, and salt. In a large bowl, whisk together the milk, eggs, melted butter, and vanilla. Add the flour mixture and stir just until combined. A few small lumps are fine. To ensure tender pancakes, make sure you dont overmix the batter. Using a rubber spatula, fold in the blueberries. If using frozen berries, add them frozen, not thawed.

Then you just cook the pancakes like normal. The only thing I did notice is that the batter is not as "runny" as usual so it may take a little working with, but it is worth it in the end! It was so good!
