BLT macaroni salad, the best pasta salad I have had in a very long time! So good in fact, I am making this again (but a double batch) for a b-day/memorial day BBQ we are having this upcoming weekend. Who would have thought taking 2 things I totally love (bacon and pasta) and making a fabulous dish out of it? It was absolutely delicious and quite filling. The recipe states to serve after including the bacon but I found that the day after it tastes SOOO much better because the flavors have had a chance to blend together and the bacon is very flavorful. So good! The general idea of the http://www.skinnytaste.com/2011/06/blt-macaroni-salad.html is super easy and I only changed up a few things. I used regular macaroni (no wheat, no gluten free, etc.) just plain run of the mill macaroni. I used plum tomatoes instead of vine/beef steak. I just love plum tomatoes, they are generally the only tomatoes I buy and eat so I used like 6 of them and retained the juice as it said. Everything else I followed as written. You are making quite a number of servings with this and I was shocked that 4 tablespoons of light mayo were enough but the juice from the tomatoes definitely helps it go a long way. I have a feeling this is going to be my go to dish to bring when I go to cook outs this summer! That is, if I don`t get a hankering to make cupcakes first :).
