This is definitely not everyone`s cup of tea. I am strangely a huge fan of bittermelon, which basically is a bitter vegetable. I love the taste of it, and honestly everyone around me is always shocked when I prep bittermelon soup or salad.
For today, I wanted to have a different kind of simple salad (compared to my usual spinach or kale mix). I decided to lightly sauté up some cup of bittermelon (because having them raw would be a little insane) in coconut oil, and then added chopped up cilantro for freshness. And to balance out the flavors and add more protein, some hard boiled eggs.
Definitely filling and delicious!
