Since hubby and I are vegetarians, a lot of people recommend that we add beet roots in our diet because of its nutritional values. It is definitely a challenge for us because we are not used to the earthy and unique taste of this root vegetable since we`ve never had it previously. Anyways, hubby decided to make a beet root soup and used some other vegetables such as tomatoes, spinach, cabbage and added some tofu to mask the taste a little and to make it more palatable :) It came out surprisingly good:) We are planning to make it again in the future. I know some people roast them or eat them with salads, we`ll have to try making that soon. Do you have a recipe using beet roots that you`ll love to share?:)
