A vegetable I haven`t eaten in a while is beets. They`re so good for you and packed with phytonutrients called betalains, which provide your body with antioxidant, anti-inflammatory, and detoxification support. They also turn your pee pinkish red lol. Normally if you ever saw that you`d probably think there would be something wrong with your kidneys or something lol.
But one of my favorite salads to have is sliced beets, arugala, almonds, cheese and usually sliced pear or dried cranberries as well, but we didn`t have pears or dried cranberries, so it was just the beets, arugala, almonds, and light mozzarela cheese. I put a bit of raspberry vinagrette onto it which is my favorite to have with beet salad. I don`t use a lot of salad dressing as the beets have a natural sweetness to them, the cheese adds some flavor, and the arugala has a slight bitter spicy taste to it.
