Tacos anyone? What I love most about leftovers is coming up with new ways to enjoy the meal you had the previous day by changing things up. I had leftover strips of beef, so I decided that by warming them up and adding some freshly sauteed vegetables, they would make great tacos (more specifically fajita tacos).
So how does this change? Well by keeping the fajita seasoning on hand, it changes the favor of the protein and vegetables. This process of re heating and putting everything together in a flour tortilla takes less than 10 minutes, and is pretty darn tasty.
I tend to get bored when I have to eat the same leftovers. And when I am bored I tend to want to make the mistake of eating out more. So by getting a little creative, I can save money and be more healthy.
