Beef peanut stir fry with quinoa

Hey all, I wanted to share with you, a quick and easy stirfry recipe I used to make dinner last night.

The key for this recipe is the peanut sauce!

First, I put my quinoa on the stove top and let that cook. After the initial boil, it just needs to simmer on low heat, and cooks with minimal fuss.

I had some beef that I had cut into cubes and marinated overnight using olive oil, sriracha sauce, mustard and some Montreal Steak Spice.

I took the marinated beef and quickly cooked it in a large pan on medium heat. One the meat was almost cooked, I added my frozen veggies that I like to keep handy.

The sauce that I added over top is pretty simple. Some Peanut butter, a little olive oil to help make it more of a sauce, and some hot sauce! I put the sauce in with the veggies and stirred. The sauce can start carmelizing on the bottom of the pan, but you can just use a little bit of water to deglaze it.

You can serve this with rice or even toss some cooked noodles with the stirfry as well, but I opted for the quinoa since it`s quick, healthy and easy!
