Beef Noodle Soup

This is a nice twist to the regular chicken noodle soup =P

Wasn`t feeling too great so I decided to make some homemade soup for myself. I realized that I ran out of chicken broth so instead, I made a nice beef noodle soup using beef broth.

First, I boiled the carrot medallions with salted water for 10 minutes. Personally, I hate the taste of raw carrots so I always boil them to the point where they are super moist so they can absorb other flavors. I found that between 10-15 minutes was the optimal time, and with salt, the salt helps to quicken the process. Once the carrots were boiled, I drained them and boiled them in beef broth. I also added some sweet corn kernels, peas and tri-colored pasta into the beef broth.

Cover and let simmer for 10 minutes. Add a bit of butter to it (it seems odd but trust me, it makes the broth a bit creamy and more flavorful). Serve hot.

It tasted really good actually =) I was surprised how well beef broth mixes with vegetables and pasta. The corn added a touch of sweetness to it since beef broth is more salty than chicken broth. The peas and pasta also helped to absorb the flavor so the soup doesn`t taste too savory.

Overall, a very healthy soup that was only 200 calories per 2 cups! Yummy.
