This was a meal I really just invented out of thin air. I was at the store and spotted this prepared beef fajita steak and decided to pick it up since the caloric content wasn`t bad at all and the fat was incredibly low. I have this minor obsession with pita bread -- so I knew I had extra pita bread at home and I thought ... why not make a pizza with this? Just switch out some of the staple pizza ingredients with more "Mexican" type ingredients. So that`s exactly what I did.
I sauteed up some green peppers and onions and when done, I went on and began creating my "masterpiece." No really, my boyfriend told me I was a genius for making this because he SO enjoyed this & was completely in his glory. I took my pitas and put them on baking sheets. I then used medium salsa as the "sauce" then topped it with a little bit of fat free mozzarella to keep the salsa from drying out. I then added on the serving (3 oz) of beef fajita meat to each pizza, then added on some sauteed peppers and onions to each. I then baked them in the oven at 375 for roughly 10-15 minutes until the cheese was melted and the bread was crunchy.
Removing the pizzas from the pans, I placed them onto cutting boards and sprinkled with diced tomato and sliced lettuce, then put a dollop of sour cream in the middle of mine. My boyfriend isn`t the biggest fan of sour cream (unless it`s a dip) so he didn`t have any. But he did enjoy his food, before I even took a bite of mine, he was mowing away. I love when he enjoys what I cook :).
