Sunday this is what we had for dinner. I made BBQ pulled pork sandwiches, tater tots, and country style baked beans. It was absolutely delicious!
I made the pulled pork by taking a pork tenderloin and putting it into my crock pot. I poured 1 can of root beer over the top, put the lid on, and let it cook on low all day (a total of about 9-9.5 hours). After that, I drained off all of the liquid and shredded the tenderloin. It was easy to shred because the meat had become super tender. I put it back in the crock pot and sprinkled some salt, pepper, garlic powder, and onion powder over the top and then dumped in 2 bottles of BBQ sauce. If you have a Krogers grocery in your state, try their store brand in the flavor "Thick & Spicy"... it is amazing, especially considering it is just Kroger brand. I put the lid back on the crock pot and let it warm back up...just about a half hour.
For the sides I took some help from Ore Ida tots and a family sized can of country style bbq baked beans. Nothing fancy, but good and worked well into the meal.
Everything was a hit. For such a simple pulled pork, it tasted like restaurant quality. If you are looking for a meal that is good and full of flavor but beyond easy.. try this one. A lot of pulled pork recipes you have to spend a lot of time tending to the meat... not this recipe!
