This was my dinner two, three nights ago? I had a few servings of pasta out so I whipped up a quick, small pasta salad. I threw in some scallion, black beans, corn, peas, and carrots. Typically I like red onion and green/red pepper in it but since I didn`t have the peppers I just used scallions. I tossed it with a simple light Italian dressing and let it marinate in the fridge.
For my chicken salad, I had picked up a rotisserie chicken at the market, pulled all the skin off, pulled the meat off the bone, shredded it with a fork and added in red onion, celery and fuji apple (that I had tossed in lemon juice). I added in black pepper and sea salt for flavoring, 1/2 cup mayonnaise in the entire batch (I don`t like it bogged down with mayo). Before it came time to serve, I had a "stroke of genius". I had spotted some buffalo, cesar and barbecue chicken salad at my local grocery store. I ended up making the buffalo chicken salad for my my boyfriend and made barbecue for myself. How`d I do this? I just added in a tablespoon of barbecue sauce into my chicken salad and mixed (you can add more based on your mood) and a tablespoon of buffalo to my boyfriends and mixed it in, then stuffed the chicken salad into a half of a pita pocket.
Overall this was SUCH a delicious meal!
