We had some over ripe bananas that bas been in the house for a few days now to the point where they are black so earlier today my mom made some banana fritters. It was a cross between a donut and a fritter it`s hard to explain but they were delicious! She said that she used some pancake mix, rice flour, mashed ripe bananas, baking powder, cinnamon and vanilla extract and then fried them in a shallow pan with about 2 inches of oil. She dalloped the batter into the shallow oil with a spoon and they came out shaped like puffy disk. She also dusted them with powdered sugar when they were done being cooked. My mom likes to experiment when it comes to cooking and this was so good. It was crispy on the outside and soft on the inside perfect! At least she`ll have something to make next time she has overly riled bananas lol! __________________________________________________________________________
