One of my favorite post-work meals to make lately has been a nice balsamic-based caprese salad. It`s fresh, super simple, and absolutely delicious! It feels like a treat even though it`s quite healthy!
I use four simple ingredients in my salad:
-Green and purple lettuce (sometimes spinach)
I cut up the mozarella into little bit-sized pieces and then cut the cherry tomatoes in half. I don`t use regular tomatoes because I never use a whole tomato up in time for it to be worth buying, so I buy the cherry (or grape) ones since it`s simpler for me to use when I want that way. Next, I tear up the lettuce or spinach into smaller pieces. Finally, I drizzle on some balsamic glaze and voila! Deliciousness!
In a smaller portion, this is fantastic as a snack, too! Definitely beats coming home and snacking on chips, lol. My only problem is that I usually end up running out of one ingredient before the others, so, after awhile, I have to make it sans one ingredient. It`s still good, though! :)
