If there is one thing I love more than makeup and clothes, it`s baking. From baking cookies to baking lasagna, I get a lot of good use out of my trusty old oven. And I say old because literally, it`s old. The house I live in was built in the early 1950`s so I doubt it has been replaced since. Still, it does a decent job at baking my creations.
I have been in the dessert baking mood recently. For valentines day, I baked 6 mini cheesecakes which were to be enjoyed my husband who has a very big sweet tooth. 2 days later, here I am, bored....going through my pantry figuring out what to bake next. I found a bag of white chocolate baking bits as well as a bag of dried cranberries and a light bulb went off....hello....white chocolate and cranberry cookies! I know that may be more of a Holiday type cookie but who said there has to be rules to baking cookies. I hate rules. Well sometimes...lol. If I want to bake pumpkin pie during June I will and if I want to bake Cranberry cookies during February, I will!
Here is another treat I made for the husband....okay so for myself too and maybe my neighbors (if there is any left to share), but mainly my husband because he will probably finish the entire batch before I can get to them.
What you will need for this recipe:
1 cup dried cranberries (I guess you can use any other type of dried fruit if you`d like but then they wouldn`t be called white chocolate and cranberry cookies now would they?)
2/3 cup white chocolate baking bits
1-1/2 cups of flour
1/2 cup of white sugar
1/2 cup of brown sugar
1/2 tsp of baking soda
1 tablespoon (3 tsp) of vanilla extract (or brandy if you want to use alcohol)
1 stick of butter (or 1/2 cup of margarine, but butter is better for making cookies)
Preheat your oven at 375 degrees. Mix all the sugars together along with the butter. Then mix in the flour, baking soda, vanilla, and egg. Form little balls and place them on your greased up cookie sheet. Then place in the oven for about 10 minutes until lightly browned. Then let them cool before eating them.
This will probably be one of the best cookies you will ever try. Let me know if you decide to make this!
