What`s the easiest way to prepare a great seafood dish? Baking it in the oven! A healthy meal doesn`t have to take you hours prepare. So on days where I find that I am in a rush, or just don`t feel like going through food preparation, I just leave out some fish to thaw before tossing it in the oven.
Honestly, all you need are the usual seasonings (salt and pepper) and a squeeze of fresh lemon (or lime) for that added zest. Throw in the oven for about 40 minutes and you`ll have a perfectly cooked red snapper (or any other seafood of your choice).
I love having fish over a bed of greens. It makes the meal more filling while still being light.
