On Tuesday this is what I prepared for our dinner. I have recently found a lovely lady on YouTube who makes AMAZING, mouthwatering dishes. I spotted one that sounded and looked amazing in her video. The recipe was for bacon cheddar ranch pasta. Oh man... I had to make it. I did change things up a bit to suit my tastes (and because there was a flub, which I`ll tell you about in a minute). You can see her original recipe http://divascancook.com/2012/06/bacon-cheddar-ranch-pasta-salad-recipe-creamy-cold.html The things I changed: I did not use an onion. Instead, I chose to use green onions. The flavor is more mild, I enjoy green onion, and I prefer the texture over raw onion (I`m not a fan of sweet onions, red onions, etc. unless they are cooked to bring out the natural sweetness). The next thing I changed was to exclude broccoli. I had bought broccoli about a week earlier with the intentions to use it in a chicken dinner but that never happened and I forgot about it. By the time I went to make this the broccoli was looking questionable, so I just tossed it out. I wasn`t going to risk it. Finally, I chose to use Roma tomatoes over standard vine tomatoes because I prefer their flavor. You could even do grape or cherry tomatoes. Mmm, that would be REALLY good! OH, I did change a couple more things. Instead of raw garlic I used garlic powder. Again, because raw garlic can be very strong and I wasn`t keen on finding a bit of raw garlic in a bite. I felt the powder would blend in better and not be so strong. The final thing I changed was to season at the very end with some salt and pepper. I felt it needed a bit of seasoning to feel and taste finished. I also didn`t really measure my ingredients. I tossed things together until it looked right to me. That is pretty standard when I`m cooking. Unless I`m baking, I just eyeball as I go. Man oh man, this was delicious. I highly recommend you try it.
