Awesome Sweet Potato Gnocchi

2 eggs
1.5 cups flour (wheat, rice, bean, flax, etc. - whatever your health needs require)
.5 cups flour (I used tapioca starch here for extra binding, but any flour is OK)
2 sweet potatoes ~ 1 lb. (or about 2 cans of already pureed sweet potato)
Salt (1 tsp)
Pepper (1 tsp)
Ground Cinnamon (1/4 tsp)
Ground Cloves (1/4 tsp)
Ground Ginger (1/4 tsp)
Ground Nutmeg (1/4 tsp)
Coconut Oil or Butter or Earth Balance Buttery Stick (to taste, at end for simple sauce)

1. Cook sweet potatoes (via microwave, baking, or boiling - if using canned sweet potato ignore steps 1-2)
2. Peel and mash sweet potatoes and let cool
3. In a mixing bowl, combine spices and 1.5 cups of flour
4. In separate mixing bowl, combine 2 eggs with the cooled pureed potato
5. Slowly add flour mixture to potato mixture
6. Once dough is combined, let it rest for ~15 minutes
7. While dough is resting, boil water in a large pot (~4 quarts)
8. Divide dough into 4 sections, roll each into thin strips
9. Cut each strip into 1/4 inch to 1/2 inch depending on desired size of gnocchi
10. Place gnocchi in boiling water, cook until gnocchi float to surface
11. Drain well, and serve warm with sauce of choice (I like to throw them into a pan with coconut oil or butter, but parmesan or a white sauce works well too)

The photo isn`t mine because I don`t have a nice camera. As well, their recipe is significantly different from mine. However, the above recipe is mine from result of exploration in the kitchen with various recipes and has made lots of people who hate gnocchi into gnocchi lovers :)
