I love the taste of avocados so I love adding them to salads and sandwiches and the like when Im at home.
This is my own recipe for Avocado Salad. Of course you can add and take away things as you prefer.
First things first, you need to cut up your avocados. I find the easiest way to do this is to do it while they are still in the shell. First you split the avocado in half lengthwise and twist apart. In order to get the pit out with having to dig it out, use your knife. Tap it hard against the pit until it sticks and then lightly twist the knife until the pit pops out, still stuck to your knife. (I hope my explanation makes sense, but if it doesnt, just YouTube it.)
Next, you can dice the avocado while it is still in the shell. Just run your knife lengthwise and crosswise in the avocado making the dices as big or as small as you would like. Once you have done that, you can use a spoon to dig out the flesh and it will already be perfectly diced!
For this salad, I used a bed of baby spinach leaves, some grape tomatoes split lengthwise, and some diced cucumbers as well as the avocado. I normally like to add some diced or shredded carrots as well, but we didnt have any. For the dressing, I used olive oil, a little balsamic vinegar and added some dried herbs including a little bit of salt, black pepper, and chili pepper.
The best bet it to prep everything before hand, except the avocado since you dont want it to brown. I usually prep the spinach, tomatoes and cucumber in a bowl and use a little container to mix the dressing. Right before I need to serve, I dice up my avocado, add the dressing, mix and serve.
