Austria boasts one of the world`s most famous culinary traditions. A diverse yet delectably harmonious range of dishes reflects the country`s mix of nationalities and food cultures through the centuries, and inspires visitors from all over the globe. Austrian cuisine is most often associated with Viennese cuisine, but there are significant regional variations.
Austrian cuisine is a style of cuisine native to Austria and composed of influences from throughout the former Austro-Hungarian Empire. Regional influences from Italy, Hungary, Germany and the Balkans have had an effect on Austrian cooking, and in turn this fusion of styles was influential throughout the Empire.
Typical Austrian dishes include:
- Wiener Schnitzel
- Tafelspitz= beef boiled in broth (soup), often served with apple and horseradish and chives sauce
- Kaiserschmarrn== soft, fluffy pancake ripped into bites and slightly roasted in a pan, served with applesauce or stewed plums.
- Apfelstrudel
- Sachertorte = a chocolate cake with apricot jam filling, traditionally eaten with whipped cream
- Knödel
The Vienna cuisine is internationally most famous for its sweet tooth (its pastries and sweets). Very similar to Bohemian cooking, sweet meals ("Mehlspeisen") are often served as main courses. We dont know of any other region in the World where this is common. Sweet omelettes and soufflés, strudel with quark or fruit filling, potato dough gnocchi or dumplings with poppy seed, nut or fruit filling or sauces, Kaiserschmarrn (kind of a torn omelette), vanilla and chocolate sauces are a common base for a proper meal. Many Austrians often have soup as a savoury starter and then a sweet main course.
A typical Austrian`s day begins with a light breakfast of coffee or milk with bread and butter or jam. Sausage served with mustard on a hard roll is a typical midmorning snack. Lunch is usually the main meal of the day and consists of soup and a main course of meatsausage, the widely popular Wiener schnitzel (breaded veal), chicken, beef, pork or fish. Fresh vegetables, dumplings, noodles, or potatoes often accompany the main course. A salad may conclude the meal.
Austrian city dwellers often take a midafternoon coffee break at a national institution, the coffeehouse. Part of the Austrian way of life, the coffeehouse serves as a meeting place and a source for breakfast or a snack or light lunch. Most coffee-houses, which usually also serve alcohol, have their own distinctive atmosphere. The evening meal usually consists of light fare, perhaps cold meats, cheese, or smoked fish with bread and wine or beer.
