Asian Chicken Lettuce Wraps

This was delicious! Man was it good! I made this today for our dinner. It was satisfying without feeling heavy in the stomach. It was rather quick to put together and is jam packed with flavor.

What I did was put a bit of sesame oil into a pan and let it heat up a bit. Then I put in some ground chicken and browned that up. Once the meat was no longer raw I threw in 3 cloves of minced garlic and a few tablespoons of minced onion. I let that cook for a couple of minutes. Then, I put in some diced bell peppers, sliced bamboo shoots, and sliced mushrooms. I let that cook for a few minutes to get everything softened up. Finally I spooned in a tablespoon of soy sauce and about 3-4 tablespoons of hoisin sauce. To keep it light I served in in a lettuce leaf. I just wrapped it up and ate it. My son, however, was having a hard time keeping his together so I went back into the kitchen and quickly made some white rice and then poured his over the top of the rice. That made it easier for him. Just eliminate the lettuce entirely. Plus, it is probably a bit more filling on his little tummy to have it with rice and not just the lettuce.

It has a bit of a sweet taste, which we all enjoyed. This is a meal that I will definitely be keeping in our meal rotation.
