Arielle`s Cupboard: Sour Curry Paste

Now sour curry paste can sound a little scary. I think the sourness might lead people to believe the paste as gone bad, but it really just tastes like there`s been lime added to it. I love that zest!

The nice man at the store told me that with these curry pastes, the darker the can the spicier the curry. So the yellow one I got was mild, and this orange one is a little spicier, and a red one would be blazing hot! He laughed and said I wouldn`t be able to handle it, but I beg to differ ;)

This curry paste is prepared in the same way, with coconut milk. I like using coconut milk more than condensed milk because the paste becomes less thick and more soupy. I prepare the soupiness!
