Arielle`s Cupboard: Karee Yellow Curry Paste

On a friend`s recommendation, I purchased this curry paste from a local indian supermarket. It was really in the middle of nowhere, one of those hole in the wall places that you wouldn`t know about unless someone told you. I love finding places like that because I can always get authentic or just good foods at good prices.

The way you prepare this is, you need to use condensed milk or coconut milk, and mix it together in a hot pan until it all melts. Then you have this delicious soupy sauce that`s great for eating with Indian rice. There is a difference between Indian rice versus mexican, Chinese/Japanese, and Korean rice. Indian rice is dry and a thin, it`s not dry in the sense that it`s stale, but dry because they usually eat with their hands. If you tried to eat Chinese or Japanese rice with your hands, it would get all sticky and gross on your hands. This curry sauce also tastes great with paratha!
