we had some severely over ripe bananas, and you know what those are perfect for? BAKING!! i looked up a recipe for banana bread that looked nice and easy and got to work! ripened bananas are perfect for recipes that call for banana because it`s really soft and easy to mash. i HATE ripened bananas and in fact, i like to eat mine a little raw even. whenever they get to a certain ripeness, i avoid eating them EXCEPT in baked goods :)
i used the recipe from the source link but used a square pan instead of a loaf pan because i don`t have one and i can`t be bothered to get one... yet! we`ll see if i keep baking recipes that need one.
i added ocean spray craisins and after the bread was done baking, i topped it with sliced almonds.
these were quite good BUT i must note that it`s really important to mash the bananas well. if you don`t, your bread can end up a little dense and gummy, which mine kinda did. i was just too sloppy, but i learn from my mistakes for next time.
