Angel food cake

12 Egg Whites, at room temperature
1 cup of Cake Flour
1 ½ cups of Granulated Sugar
1 ½ tsp of Cream of Tartar
1 ½ tsp of Vanilla Extract
½ tsp of Almond Extract
¼ tsp of Salt

1.turn oven to 350

2. In the bowl of a standing mixer fitted with a whisk attachment add the egg whites, salt and cream of tartar whisk until the eggs whites are frothy.

3. Turn the speed up to medium high and slowly start adding the sugar beat until the egg whites have reached stiff peeks.

4Turn the mixer off and use a spatula to fold in the flour, vanilla and almond extract when you start adding the flour, add it 1/3 at a time and fold well after each addition

5. Pour batter into you pan making sure to run a knife threw it to remove any air bubbles.

6. Bake for about 45 minutes or until it springs back to the touch

7. cool and enjoy
