Well, I was in a muffin baking mood and I wanted to experiment today, so I went to the store and the Mrs. Field`s Banana Snack Cake Mix caught my eye. I didn`t need eggs since I usually bake with peaches. The peaches makes cakes taste moister and it`s cheaper than eggs. That, and I already had peaches on hand.
Serving: 10 muffins cups
Here`s the recipe:
1 box of Mrs. Field`s Banana Snack Cake Mix
1/3 cup of peach (pureed)
1/4 cup of apple cider or spiced apple cider
1/4 cup of water
A tsp of turmeric (optional, for color and health benefits)
1/2 tsp of apple pie spice or a mixture of cinnamon, ginger, and nutmeg (optional)
1 or 2 tbsps of sliced almonds
1/2 tbsp of flax seeds/linseeds (optional, for an extra nutty flavor and omega oils)
2 tbsp of sunflower oil or any other oil of your choice
1 Mixing bowl
1 Measuring cup
1 blender or immersion blender
1 Hand mixer or immersion mixer attachment
Tablespoon and teaspoon set
A Muffin pan or silicone muffin cups.
10 paper muffin cups (Only if using a muffin pan)
A cookie sheet (Only if using silicone muffin cups)
1.) Preheat oven at 350 (F) degrees.
2.) Blend peaches, apple cider, water, almonds, and flaxseeds/linseeds (optional) together and place to the side for now.
3.) Take a mixing bowl and place cake mix, apple pie spice/mixture (optional), turmeric (optional) first in the bowl (dry ingredients goes first).
4.) Pour mixture from step 2 and pour sunflower oil into the same mixing bowl.
5.) Mix together until it becomes a smooth batter.
6.)Carefully pour batter into muffin pan (If using paper muffin cups, place them first before the batter) or silicon muffin cups (If using silicon muffin cups, place cups on cookie sheet)
7.) Place in oven and bake for about 23-25 minutes (Depending on your oven settings, I use a toaster oven).
8.) Use toothpicks to test if whether or not they are done.
9.) Wait 9 minutes to cool and enjoy. :)
Tip: If you wish to save these muffins for a week or longer, place muffins in a container and freeze. Whenever you wish to consume one, you could either microwave for 30 seconds to a minute or place in oven for a few minutes.
