Last week some time I watched a video that showed a spin on the typical grilled cheese. It made me immediately hungry. I, like many, love grilled cheese. I grew up eating them with american cheese and a bowl of creamy tomato soup. Well, this was more of an adult grilled cheese, if you will. You can watch the video by http://www.youtube.com/watch?v=f18XhqVTYHo He used sour dough bread, which would have been good, but I chose a different one while I was strolling through the bakery section. I got one that had a mix of different grains and seeds and it was really good. The only other change I made was to not put it under the broiler. I could have, but I just chose to keep it on the stove top. We ate ours with creamy tomato soup on the side (side note: milk tastes WAY better in tomato soup than water). I also added the remaining tomato slices to my plate to eat with a bit of salt over the top. I love tomatoes and enjoy eating them alone. Don`t go into this sandwich expecting it to taste like your typical grilled cheese. It doesn`t. The flavors are more mild and fresh, and the cheese is way more stringy. My husband didn`t care for it... he said it wasn`t bad at all, but he prefers the stronger, more prominent flavor of American cheese or Cheddar cheese. I think the next time I make these I will also add some deli meats. I think it needed a bit of salty flavors, so something like ham or salami would have been delicious.
