Heres a quick and easy recipe to substitute scrambled eggs. Its very delicious, I loved it and you will to :)
It low in fat and high in protien.
Tofu Scrambled Eggs
1 Package of soft tofu
1 Red potato
1 Small green pepper
1/2 Tablespoon of each of the following seasonings: cumin, turmeric, garlic powder, curry powder
Black pepper and red pepper flakes to taste
Handful of chopped cilantro
Olive oil cooking spray
Drain the tofu and mash it up into chunks.
Chop the potato and green pepper into small pieces.
Heat a pan on the stove top and spray with cooking spray.
Add the tofu, pepper and potato to the pan.
Stir in all of the seasonings. I like to eyeball the amount of seasonings I put it so feel free to adjust the amounts to your liking.
Saute for about 10 minutes, stirring occasionally, until the potatoes are soft.
Stir in the chopped cilantro and serve hot.
