Well I guess technically these are a savoury muffin more than a cupcake, but hay-ho!
-Recipes makes 12-
-1 1/2 cups flour
-1/2 tsp salt
-2 tbsp white sugar
-2 tsp baking powder
-1/3 cup vegetable oil
-1/3 cup milk
-2 cup shredded mozzarella cheese
-2 cup mini pepperonis
-1 cup tomato puree
-1 or 2 other toppings you like on pizzas (:
- Turn on oven and preheat to 400 degrees F.
- Line a 12 cupcake pan with liners.
- Mix the flour, sugar, salt and baking powder in a bowl.
- Add in vegetable oil, egg, and milk to the flour mixture and stir together until a the batter is smooth (but it will be sticky).
-Fold in ONE cup pepperoni and ONE cup cheese then fill into each cupcake cups so they`re about 2/3 full.
-Bake until muffins are golden and knife inserted comes out clean.
-When you are ready to eat, top with the other cup of cheese and pepperoni and any other toppings you wish to use, inc. puree then bake for about 5 minutes at 350 F to allow puree and cheese to melt in. Then serve immediately (:
