I think I`m in love with this cake. Because it was my birthday a couple days ago and instead of going out to buy my cake , I wanted to make my own since I was carving this and I haven`t found a bakery or store that sells this. What better way to satisfy your craving then make your own cake right! I didn`t mind making it myself even though it was my birthday... Lol cause no one else in my family bakes and since I love to bake, it`s a win win situation.
This time though I decided to make it 3 layers. Sorry I didn`t get to take a picture of the inside, it was all gobbled up before I remembered to.. Haha
Last time I just made it two layers, there wasn`t enough for seconds or shall I say thirds ... Lol
You might think 3 layers is a lot but this cake is very light and fluffy and moist. It`s not heavy like those traditional American cakes. And the whipped cream wasn`t overly sweet and I also didn`t bombard the cake with icing. I used just enough to fill and ice the cake and a little extra to pipe borders around the cake for decoration purposes. In addition to the borders, I decided to decorate it with pink and bluish roses with rose buds cascading down the cake. I orginally wanted lavender roses but I accidentally lightened the icing turning it to a bluish tinted color. But it still came out really pretty. Since it`s a 9` round cake, there wasn`t much room for too much decorations so that`s why I chose simple roses. And this completes my birthday cake I made for myself.
And to top it off, my furry baby Mia, licked some of the icing! Thank goodness she didn`t get a whole load cause it`s coffee flavored. That little girl will eat anything...lol
