With some left over egg roll stuffing, my mom decided to stuff some into tomatoes. You can also stuff the leftover stuffing into bell pepper, mushroom or into patties too but my mom wanted to use tomatoes since we had a bunch! On the vine tomatoes to be exact to make some tomato and tofu soup. The soup base is made with some chicken broth. This soup is really unique and flavorful- I actually ended up enjoying the soup which is rare! I don't think there is a set recipe for this because my mom just winged it but it turned out really good. Soup was served with rice.
Have you ever tried a soup with tomatoes, tofu and pork before? Or something similar

My mom makes this! She also makes stuffed tofu or stuffed bittermelon. I never eat the stuffed bittermelon because I can't stand the taste.

My mum has made something similar but not quite like what you had. I know my mum likes frying the tofu and cooking it with the tomatoes until the tomatoes disappear lol but there isn't no soup

yummy! Looks like a dish my grandma used to make. Whenever she made stuffed grape leaves, any leftover filling she would use to stuff tomatoes, peppers, zuchinni and other veggies.
