This is a dinner I cooked up for my mother on Mother’s Day. Originally I had plans which were to take me away for the day (First Communion) but my boyfriend ended up not feeling well so we ended up not going. Earlier in the morning I had rushed around and made my mother breakfast figuring I wouldn’t be able to spend the day with her – turns out, I was. So I opted to cook dinner for her. My brother and sister-in-law ended up coming down so they joined in on the feast since there was a ton of food.
She wanted pork schnitzel (breaded, fried, pounded pork cutlet) and homemade mac and cheese. As a side I decided to make corn on the cob because it’s truly delicious this time of the year. Then while growing up, anytime we had schnitzel (whether chicken or pork) we ALWAYS topped it with sliced tomato & scallion in Italian dressing. It just accentuates the taste of the meat.
The pork was the easiest part – I dredged it in egg mixture, dipped it in Italian bread crumbs and fried it to perfection in a cast-iron pan. I love frying in cast-iron it makes everything nicely browned, it cooks in half the time and it cooks evenly. When done frying I put it on a metal pan and put it in the oven to keep warm.
The corn was simple; I just boiled it up in some hot salted water. It doesn’t take a lot of time to cook. The less you do to it, the better – at least I feel that way.
Now the mac and cheese was FABULOUS. Seriously, I was obsessed, I kept eating it haha. I haven’t had homemade mac and cheese in a while and since my boyfriend doesn’t like mac & cheese it’s not something I cook or consider cooking as a meal. I boiled up some of the larger elbow macaronis (I don’t know the proper name for them), then drained when they were done. I added the drained pasta into a lasagna pan and heated thru a can of cheddar soup mix, like not even 1/3 cup skim milk, a little bit of black pepper, and some 3 cheese cheddar. When mixed it was poured over the pasta and mixed in. Then the best part – a Ritz cracker topping. I just take a bunch of Ritz and squeeze the life out of them and top the pasta. It gives it a nice, crunchy top, that’s buttery since Ritz are a butter-based cracker. Amazingness!
