i had disproportionally extra chicken for my pasta from dinner last night, so i cut that up and used it to make myself a quesadilla for lunch. i heated up the chicken first just to make sure it would be hot even in the center and then i put it on half of a tortilla. i used sharp cheddar cheese, then i folded the tortilla in half and put it in the toaster oven. i didn't use that much cheese because cheese is actually something i'm avoiding for my diet and i even used reduced fat cheese. i don't need excessive amounts of cheese to be satisfied though :)

the quesadilla was quick and easy and YUMMY! this is definitely something i'm going to make a lot in the future because it's so simple and a very quick meal.

do you like quesadillas? what do you like to put in your quesadillas? i'd love to read some of your suggestions because chicken and cheese might get old after a while... or not ;)
