This is what I had for lunch today! I had a BBQ yesterday and since my fridge is smothered with leftovers, I decided to use one of the chicken breasts and some of the green salad leftover and make a meal out of it. I wanted something light since I know I am going out to dinner tonight, plus I over indulged yesterday so I want to have one meal that’s “back to the basics” today. I used one of my fresh pita breads I picked up at the local Lebanese bakery, layered it with fresh green salad (lettuce, tomato, cucumber, green peppers, and red onion), a tiny splash of Italian dressing and I topped it with the grilled chicken breast which was marinated in an Italian blend seasoning. I heated the chicken to take the chill off in the microwave because I just can’t stomach eating cold meat – it just weirds me out. But there you have it, my lunch!
