Homemade chicken soup is my favorite comfort food, especially when I'm feeling under the weather. And homemade chicken soup is actually not very hard to make, and is way healthier than the stuff you get in a can at the supermarket.
I just simmered some large chicken drumsticks in a large pot of water for about an hour, then added some chopped carrots, onions, and some shiitake mushrooms (optional) and continued to simmer for another hour. Basically you want to keep it at a simmer until the meat is falling off the bones of the chicken. After about 2 hours, scoop out the chicken pieces and remove the bones from the pot. You can also add a bit of salt, pepper, or other herbs if you want.
It's time consuming because it takes so long to cook, but it doesn't require much prep work and you can just leave it simmering while you watch tv or something :)
