Last night, this was dinner for the kids and I. Also for my boyfriend when he came home from work late last night. I had some chicken I had defrosted so I needed to do something with it before it goes bad. I was feeling like something along the lines of orange chicken. So I went with making Chicken with Lemon Sauce for this meal.

I had Panko Bread Crumbs in my cubby so I thought I would put some use to it. I then started with cooking the rice first. But before prepping the chicken, I heated up some canola oil in a frying pan. I then cut the chicken into random pieces and seasoned it with salt, pepper, & parsley. I mixed that into a bowl. I then dipped them into flour, then into the egg, then in to the Panko bread crumbs. After that it went into the oil. After it was done cooking, I let it strain in a strainer to get rid of the excess oil. I then went ahead and started on making the lemon sauce. It's so easy to make. All you need is sugar, chicken bouillon, garlic powder, cornstarch, ketchup, lemon juice, and water. In a pan mix the first 4 ingredients first in a sauce pan. Then add the liquids and whisk to prevent any lumps. Cook until thick and clear. I got the lemon sauce recipe from a website. I've listed it in the source link if you are interested.

After everything is done, I put some chicken in a bed of rice and then I drizzed the lemon sauce over the whole thing.

Let me tell you, IT WAS AWESOME! It was sooooooooo GOOD! My boyfriend had some when he came home and asked if there was extra for him to take to work. It was that good! =) Panko just makes everything so good! It's going to be a staple for my cubby from now on!
