Sooo this "brownie pudding" actually came about when I messed up a pancake recipe! I had made the recipe successfully before, but I didn't do it right somehow this time. >.< That's okay, though, because the result was delicious! :)
I used this pancake recipe from Chocolate-Covered Katie. If you make them as directed, they are really healthy. I used quinoa flour as my flour of choice this time, though I seemed to have more luck when I used spelt flour.
I sort of cooked the outside of the batter, and before it burned, I transferred it to a plate. Then I added some plain, fat-free Greek yogurt and some frozen fruit. It tasted really good! One of the best healthified desserts I've tried so far from Chocolate-Covered Katie, I'd say. :)
