On Sunday night this is what myself and my family had for dinner. It was another crock pot meal. I really, really don't understand why more people don't bust out their slow cookers... there are so many recipes that a lot of people don't even think of as being possible in a crock pot... and it is so easy.. just toss the ingredients together and go about your day. You come back 8-10 hours later and you have something tender and amazing.
I put some chicken drumsticks into my crock pot and by the time we had dinner...oh man.. delicious! I coated them in flour, which I seasoned up with all kinds of things (seasoning salt, old bay, lemon pepper, garlic powder, pepper, italian seasonings, etc....basically, whatever you'd like your chicken to taste like. You really can't go wrong.) Once they were coated I put them into the crock pot and then poured about 1/4 cup of butter into the crock pot and just a splash of chicken stock. I put the lid on and let it cook on low all day. I'd say I had them going on low for a good 10 hours. By the time we ate dinner they were melt in your mouth and fall off the bone tender.
For the sides I made some simple corn on the cob and mashed potatoes (REAL this time...not the cauliflower mash, lol). I flavor my potatoes with some sour cream, milk, salt, pepper, and butter. Very Simple. For the corn, I just put some sugar into the boiling water. DO NOT PUT SALT INTO YOUR CORN WATER...it will make them chewy. Sugar is okay because it will add some sweetness and not draw out the natural corn flavor.
OH (nearly forgot).. I also made some homemade gravy for the potatoes. Well, as homemade as it can get without having reserved chicken drippings... I took the help from boxed chicken stock. I first took some butter and sauteed some minced onion and garlic. When that was softened I added flour and cooked it for a couple of minutes, just to get rid of the raw flour taste. Then slowly mixed in chicken stock and wisked so no chunks formed. Let it simmer and it will thicken up. I seasoned it with a bit of salt and pepper... voila, awesome chicken gravy!
It was so good my husband went back for seconds and was telling me he thought it was amazing and his eyes are bigger than his stomach (meaning, he wanted to keep on eating it because it tasted amazing but he was stuffed to the gills, lol).

The chicken sounds delicious! I love using my crock pot to make dinner. It's really convenient since I'm always at school so I just set the crock pot to cook and by the time I want to eat dinner I have a nice meal ready for me.

Oh my lanta! Looks delicious! I never thought to make chicken in the crock pot. I'm definitely going to try it. I just usually do beef stew or ribs. It leaves the ribs just like you said. Falling off the bone soft!

This looks good. If I made this, I'd have to use breast. I have this thing with eating meat off a bone ... probably because growing up we only ate boneless skinless chicken so anything on a bone usually just skeeves me out lol. I think it's because sometimes near the bone you get that bit of darker cooked redness? Why am I talking about this? Ignore me.
You make the chicken sound so good and mouthwatering! LOL I would definitely want to try this but I have no crock pot. Maybe sometime in the future.
Dana P.: aww, well thank you! You should! If you already have a crock pot put it to use! Especially with summer here, it won't make the kitchen hot like the oven does. If you don't have one, GET ONE! LOL! You can get a nice little one for very cheap. I'll definitely keep sharing recipes as I make them :-)
